Il Muffato della Sala is a wine produced by the cantina Antinori, conceived through the love and passion of Piero Antinori for France.
The wine takes its name from a noble mold, Botrytis Cinerea.
This mold, when able to develop fully, attacks the skin of the grape berry and then penetrates inside, causing the grape to rot.
In particular climatic conditions – with high autumn humidity levels, with fog found especially at night and early in the morning, with strong winds and the help of the sun – its development is partially inhibited and the mold, once harmful, becomes noble.
Unable to penetrate inside the berry, tiny micro-holes form on the skin that allow for rapid evaporation of water, causing a natural withering of the cluster on the vine and a concentration of sugars.
The cluster takes on a shriveled appearance, from which no one could imagine a sweet and aromatic wine – less sweet than classic passiti and richer in acidity, with a refined olfactory expression inspired by apricot, candied orange, ginger, and pastry cream.
A wine that after six months in oak wood reveals itself elegant, broad, and rich in nuances.
Il Muffato della Sala connects to the most famous botrytized wines in the world: the French Sauternes, produced in the Graves area, south of Bordeaux.
The same pedoclimatic conditions found in France, in Umbria, and in very few other places in the world have allowed the Castello della Sala and Antinori to create one of the most significant Italian expressions of quality wine.
A perfect marriage of flavors with Muffato della Sala di Antinori is apple strudel and blue-veined cheeses.
