The Assisi DOC includes the vineyard areas of the municipalities of Assisi, Perugia and Spello, in the heart of Umbria, on the slopes rising towards Monte Subasio. Vineyards lie between 180 and 750 metres above sea level. Recognised by the decree of 5 May 1997, it has about 57 hectares and an output of 1,580 hectolitres.
Whites
The Bianco combines 50 to 70% Trebbiano and at least 10% Grechetto, with other white grapes up to 40%. The pure Grechetto, with at least 85% of the grape, is a full-bodied white, with aromas of yellow fruit, almond and flowers.
Reds and rosés
The Rosso and the Rosato share the same formula: 50 to 70% Sangiovese, 10 to 30% Merlot and other red grapes up to 40%. There is also a Novello. The red varietals, each with at least 85% of the grape, are Cabernet Sauvignon, Merlot and Pinot Nero, and they may become Riserva: at least 24 months of ageing, 12 in cask and 3 in bottle, with release from 1 November of the second year after the harvest. Minimum alcohol is 11%.
The Rosso combines the cherry and acidity of Sangiovese with the softness of Merlot; the international varietals, especially the Riservas, have more structure and notes of spice and oak.
At the table
The whites go with torta al testo flatbread, vegetables, fish from nearby Lake Trasimeno and white meats; the Rosato with cured meats and light first courses; the reds with porchetta, grilled meat, game and aged cheeses, and the Riservas with black truffle. To the south, on the hills opposite, lies the Montefalco DOC, and a little to the west Torgiano.
