Caratteristiche del Passito Wine

Passito wine is made from dried grapes (on racks or on the vine) to concentrate sugars, acids and aromas. A very ancient tradition (already used by the Etruscans). The main types: Passito di Pantelleria DOC (Zibibbo, Sicily), Recioto della Valpolicella DOCG (Corvina), Vin Santo del Chianti and Sciacchetrà (Cinque Terre).

Red passito wines (Recioto, Sagrantino Passito) are often fortified or turned into Amarone by interrupting fermentation.
