Traditionally considered a symbol of fertility, the pomegranate fruit was chosen by the Vicentini couple as an omen of love and a sign of enthusiasm for their work. And speaking with Agostino and Teresa in the cherry valley of Colognola, where their farmhouse is located, it is not difficult to perceive their ardent passion. That same passion that Agostino inherited from his father Francesco and that has guided him through forty years of his activity as a winegrower. The estate of Agostino and Teresa, located just a stone's throw from the village of Colognola ai Colli, is a welcoming, warm and comfortable place, with a rustic, spacious tasting room with a fireplace for winter, a historic cellar renovated in 1934 that dates back to the early last century, and a traditional attic drying room for the production of Recioto.

But Agostino is above all a man of the vineyard. And the vineyard he is in love with is the Casale, which produces the eponymous cru of Soave Superiore. Located on a flat field behind the cellar, from which one enjoys a wonderful view of the castle of Illasi and the church of Colognola, it extends over an area of 4.5 hectares at an altitude of 100 meters, enjoys full southern exposure, has a dual training system between pergola veronese and guyot, and roots in volcanic origin soil of medium texture. Particular attention is given to controlling the distribution of buds and clusters on the plant: «fundamental», says Agostino, «ile controllo della resa dell’uva: la garganega can produce a tetrapak wine as well as the great bottle». In the small pergola vines there are six buds per plant for a total of twelve clusters, reduced by half through thinning. A rigor that over time has led the Casale to move from a blend (80% garganega and 20% trebbiano di Soave, a variety in which Agostino also believes) to the purity of a single variety (garganega, naturally) and that does not exclude drastic choices at harvest: 2005, for example, was not deemed up to the standard for a quality late harvest and the Casale was not produced. The grapes are harvested during the last week of October, while vinification, in steel, involves long fermentations. Il Casale is a Soave that requires careful listening and a “stage-by-stage” tasting, distinguished by a slow and constant organoleptic evolution that aspires to last over time, finding the right balance between body, softness and salinity.

If the image of the pomegranate represents a propitious symbol, this demonstrates the success achieved in a short time by the estate, attaining good productive and qualitative levels.

Agostino Vicentini inherited from his father Francesco 20 hectares of vineyard and furthermore the passion, the love for the land, the secrets of the craft and the experience gained over 40 years of his activity. To all this, Agostino has added the desire to reach new goals, always seeking to obtain the best from an already very generous nature.

Thus is born a truly special Soave, unmatched in its aromas and flavor, which is full and harmonious, slightly almond-tinged, but above all typical. Credit also goes to the vineyard called “Terre Lunghe” endowed with volcanic origin soil that creates fragrance and decisiveness in the fruit flavors, from which the selected and thinned grapes are derived.

In addition to the Soave wine described above, the estate produces other types of wines including Valpolicella D.O.C and Superiore, and in limited quantities Recioto di Soave D.O.C.G.

Healthy products are not separate from their context, but participate in a goal of health that is not only physical, moving toward a harmony of values where nature is the supreme mother.
